This was so good! My 9 year old can be picky, but he ate this right up! I had to make do with what I had for the slaw so it didn’t have cucumbers or jalapeños, but it was good even without and I’ll add them in next time. A really easy and forgiving recipe which after a long weekend of kids sports games was a win.

Loved it! Used a bit more of broth and soya sauce fearing it would be not enough but it was actually too much. The recipe is a keeper!

    • replied:

Glad you enjoyed! As the chicken cooks in the slow cooker it will release more liquid, etc. so the measurements should be good as written!

Another winner for our family. Both kids said “THIS IS SO GOOD!” They are young adults now but it still felt like a win. The slaw is delicious.

      So happy to hear that!

We made this for supper tonight, and it turned out amazing! I did the gluten-free options–there was actually a gluten-free brand of gochujang at the store–plus no jalapeno because I forgot to buy one. Oops! Super flavorful and very messy in a delicious way. Eat with a fork!

So. Dang. Easy. & good. Perfect for a weeknight dinner. Do not skip the slaw, it adds so much! Perfect blend of salty & sweet

    • replied:

      YES best combo!

  • says:

Hi there! Could I use pork loin for this in place of the chicken breasts?

    • replied:

Hi! I haven’t tested it, so I’m not 100% sure what I’d change with the different meat.

This was so delicious!! Fall sports are upon us and a quick, delish, healthy recipe is all we have time for. I followed the recipe exactly and it turned out great! Do not skip the slaw, that tangy, fresh bite with the chicken was perfection!

I made this as written and it was phenomenal! So flavourful and really easy to make. My family really enjoyed it. I paired it along with the suggested slaw and served on brioche buns.

This was so good. I literally just got done with it and had to leave a comment. The flavors are incredible. You can use this so many ways. Grain bowls, tacos, flatbread pizza etc. loved it. Immediately added to rotation for next week. Thanks!!

YES the chicken is so versatile! Glad you enjoyed 🙂

I placed 1 cup of broth in the pot, followed by the chicken thighs. Seasoned with salt, pepper, garlic powder, and small dollops of gochujang. Cooked on high pressure for 12 minutes, natural released for about 7. Removed chicken thighs and reserved the liquid. While I shredded the chicken, I placed all ingredients for the sauce in the pot and simmered on sauté mode. Then I mixed in the shredded chicken and sautéed for a few more minutes. So good!

So simple and delicious! I made the chicken in an instant pot because it was a last minute meal. I used skinless/boneless chicken breast but followed the rest of the ingredients. I cooked it on manual high pressure for about 35 minutes. It was so good I kept eating it directly out of the instant pot. I needed a simple dinner so served it over rice with sesame seeds and green onions.

    • replied:

Perfect! Love the chicken with rice, too!!

All of your recipes are always a hit in our house! Thank you! But more and more, we are eating vegetarian meals and I get disappointed that I can’t try your meat recipes. Do you think I could sub shredded tofu for the shredded chicken in this one? Maybe not slow cooked, but just heated together in a pan?

    • replied:

Hmm I haven’t tested it but I don’t see why not! Let me know if you give it a try, and then check out all of my vegetarian dinners here 🙂

  • says:

I don’t have a slow cooker. How long would I cook this in the InstantPot?

    • replied:

Hi! I actually don’t own an instant pot, so I’m not sure what the instructions would be. You could try cooking it in an oven-safe braiser or pot with a lid at 250 degrees for about 2 hours — I haven’t tested this, but let me know if you try it!

Made the recipe two weeks ago just as written and we all loved it. It made 5 good sized sandwiches for my crew. Making again tonight. Getting a good roll is important and the suggested slaw recipe is a must!

I’m new to this blog but pleased with everything I have tried.

Made the chicken as written, then used the suggested slaw dressing on a bag of broccoli slaw (lasts for a few days in the fridge that way). Great for meal prep if you don’t want the same thing every day – we had the chicken and slaw as sandwiches, tacos with flour tortillas, and rice bowls.

    • replied:

Perfect! Yes, love how versatile the chicken is 🙂

  • says:

These are wonderful and a fun twist on a pulled chicken sandwich! We love a sunday crockpot meal prep! We did make the cilantro jalapeno cabbage slaw as well, and we actually thought it held up pretty well for a few days in the fridge. The flavor got even better as it sat together. The juices do increase some but that didn’t bother us at all! Definitely adding these to our go-to list!

    • replied:

      So happy to hear that!

  • says:

This was yummy but a bit salty, I would make it again but use less soy sauce next time. I want that Gochujang flavour!

    • replied:

Make sure you’re using low-sodium chicken broth and low-sodium soy sauce as well! That should help 🙂

I made these for the first time last week, and my husband and I are obsessed with them. They are being put on this week’s meal plan again.
I made these exactly as suggested, and I put them on toasted ciabatta buns (yum!).

So happy to hear that! One of our new favs, too 🙂

Tasty and easy! The kitchen smelled amazing as this was cooking. I added some extra chicken pieces and there was enough sauce to cover. Great day-of and as lunch leftovers.

Excellent recipe!! We used chicken breast instead of chicken thighs. Can’t wait to have it again!!!!

Do you think I could use chicken breast with good/same results?

Greetings from your local Chicago suburb (Berwyn)! I made this chicken for meal prep this week & oh my goodness, it is so flavorful & tender! I made my own coleslaw but that crunchiness of the slaw mixed with the tender chicken atop a toasted hamburger bun *chef’s kiss*. Will definitely make this one again, it’s a real winner!

    • replied:

Hi Lisa! Love hearing from a Chicagoland native 🙂 So happy you loved this one!

I am making this tonight – looks great!
I didn’t see when to add the cornstarch, but above it does say at the start. You just may want to edit the directions to include that 🙂

Thank you for the catch! Just updated 🙂 Hope you love these!

Cant wait to make this soon for me can i use tofu and vegetable broth i never had slow cooker gochujang chicken sandwiches before perfect for my after office meals love your recipes as always brightens up my day everyday after work

  • says:

I’m typically not a huge fan of spicy things. How hot is goguchang sauce?

    • replied:

It can get pretty spicy, so I’d recommend reducing the amount that you use!

  • says:

This looks delicious. Do you think it could be made in an instant pot? I’m not a fan of the texture of chicken made in the slow cooker.
Also, why don’t you include sodium in your nutrition information? It would be helpful to those of us on low sodium diets. Thanks!

    • replied:

I actually don’t own an instant pot so I’m not 100% sure what the instructions would be – sorry! I don’t include the sodium amounts because they can really vary depending on the brands of ingredients used and any additional “salt to taste” added, etc.
