With Memorial Day on the horizon, I think it’s safe to say that Summer is on the way. I just have to disregard the 45 degree windy weather every other day in Chicago. I KNOW 75 degrees in our future. I hope?
This past week was wonderful and went by quick. Lee and I announce the Summer Sweat Series on Monday and we’re thrilled to see such a great response by the amount of people who have joined our FB group. Seriously, you all are lovely. I’ve been busy planning the nutrition plan and all I can say is DELISH. Also, you get to enjoy dessert every night, who could say no to that? Join our FB group here!
Speaking of menus, I made walleye for dinner this past week and paired it with a fresh peach and blueberry arugula salad. I couldn’t remember the last time I had walleye, so as soon as I saw it at Whole Foods, I knew what was happening for dinner. Fabulous, quick and healthy!
In other news, I epically failed at making ice cream yesterday. I tried making a vegan cherry version, which just ended up looking like a reddish brown blob. I plan on trying again this weekend. Any flavor requests you’d like to see?!
This weekend: We have absolutely no plans! I love when weekends are open because we can be spontaneous. I’ll have to work a bit, but I’d really love to go house shopping on Saturday and walk around the city. We’re in the middle of redoing our bedroom and I’ve been on a Pinterest pinning frenzy. Can’t help it, I love interior decorating. I’ll probably redecorate every few years, just because.
