How was your March? Mine was filled with travel, taxes and the uncontrollable urge to eat as much avocado toast as possible.
However today isn’t about avocado toast, it’s all about March! Including delicious eats, treats, travel and things I’ve been loving lately…
New Ambitious Kitchen Recipes from March:
Blackened Salmon Tacos with Forbidden Rice + Mango Guacamole GF
Strawberry Banana Oatmeal Greek Yogurt Waffles GF
Lemon Blueberry Pistachio Cupcakes V, GF
Sweet & Spicy Quinoa Beet Burgers V, GF
Roasted Sweet Potato & Black Bean Salad with Fresh Pineapple Corn Salsa V, GF
5-Ingredient Flourless Peanut Butter Chocolate Chip Skillet V, GF
Lightened Up Carrot Cake with Cinnamon Cream Cheese Frosting GF
Slow Cooker Salsa Verde Chicken Chickpea Chili GF
It’s no surprise, but my turkey chili was still the most popular recipe in March, with my skinny banana muffins coming in second. I was surprised to see my chickpea blondies also make a comeback onto the top 10 from last month via my site analytics. Exciting stuff. I’m planning to cook and bake with more chickpeas in April, so stay tuned!
My personal favorite recipe from March was probably the salmon tacos and the carrot cake (links above!).

Instagram feature + an ask from you!
If you follow me on Instagram, you know it’s usually all about food, however this book was such a terrific read, plus it didn’t hurt that I got to read it by the pool in Mexico.
Next month, I hope to feature some of you in this post, so if you make a recipe from AK be sure to tag #ambitiouskitchen so I can see your creations (this only works if your profile is public). I’d love to see what your making!
Where I traveled in March:
I went to both Scottsdale, AZ & Tecate, Mexico! AND experienced my very first In-n-Out burger (OMG!). The AK travel guides for both cities will be coming out in April.
You guys know I love to travel and it’s been such a privilege incorporating it into Ambitious Kitchen in a natural, authentic way. So thank you for commenting on my travel posts and giving them some love. Where should we go next?!
By the way, if any of you have been to Glacier National Park in Montana, please let me know. I’m planning a trip right now and would love some hiking and lodging recommendations!
Other things I’m loving:
I got these new Nikes and LOVE them so much. They’re more for running, but I like them when I do treadmill classes or walking outside. P.S. I still haven’t had my first outdoor run of the season. Hoping to accomplish that soon, but that Lake Michigan wind is fiesty.
GoMacro Bars in cashew caramel. Also known as my favorite 3pm snack.
Trader Joe’s bran flakes with almond coconut milk. Ridiculously addicting, especially when you add raisins and bananas. Basically raisin bran on crack.
Lulu & Georgia. This site is pure gold when it comes to rugs & decorating your home.
House of Cards on Netflix. We finally busted through aka binged on season 4. Quite possibly my favorite season yet! Have you watched it?
THIS beauty sleep perfector for your skin. It’s like skin juice. I’m not kidding, I wake up in the morning after putting this on and my skin is effortlessly smooth. Moisture heaven!
Basically everything from Urban Outfitters including this floral top, this super cute dress and finally these amazing high top adidas.
I’m on snapchat almost every day making a recipe or showing you something weird about my life. Let’s be friends!
That’s all I have for you! Let me know if you have anything you’re craving for April so I can create some recipes!
Would love if you followed AK on:

So many people I know are eating GoMacro bars, I guess I have to try them now!! For April, I’d love to see recipes using berries or other fruit that’s in season. Warm weather let’s gooooo.
Yes you need to try GoMacro! I’ll work on some berry recipes for sure. 🙂
Don’t you live the good life! All of those recipes look delicious.
I cannot WAIT to see your recap of your trip to Glacier. It is #1 on my list of places to go, and I always appreciate your travel posts so much. When are you going?
I made the quinoa and beet burgers last night and they were soo good. I’m having it again for lunch in a lettuce wrap today. Definitely a winner!
Glacier is amazing! Stunningly beautiful. One of my most favorite of the National Parks. We just stayed at a campground. Highly recommend the hike to Iceberg Lake. And the drive along Going-to-the-sun Road will floor you:) can’t wait to see your pictures!
Glacier is one of my favorite places in the US (so far!). We camped the whole time we were there. Definitely check out Avalanche Lake for an easy hike, we also liked Snyder Lake in the same area for a challenging hike. It’s all amazing, I wish I could have made it to all parts!
I am so excited for what you have offer for April! I mean, March was one of my favorite months for AK! Best recipes, best travel logs and favorites posts! 🙂
Can’t wait to hear about your travels!
It was nice meeting you in Mexico. I cant wait to make some of these recipes for my family. Thank you!
