Happy, happy April. I have no April Fool’s Jokes for you, but I’m thinking about playing a prank on Tony tonight by telling him I’m going vegan. I can already imagine him going crazy because that wouldn’t allow us to have our favorite neighborhood Friday night pizza. I’ll let you know how it goes (probably via Snapchat).
Speaking of pizza, what are your favorite toppings? Each week we do thin crust with sausage, cheese, green peppers, onions and jalapenos. Goodness I’m craving that RIGHT NOW. If I had it my way we’d add pineapple and black olives, but I guess one can only ask for so much.
What I am certain about when it comes to toppings are those for my morning waffles & pancakes: strawberries, bananas and creamy peanut butter. Sometimes chocolate chips, too! Waffle recipe right here so you can do it up this weekend.
This past week: I started planning my content calendar for the rest of April and May. SO many delicious recipes coming to you. I’m trying to do my best of mixing healthy dinners, desserts, snacks and breakfasts so that you have a variety of recipes to choose from. A few of you request more berry recipes, so I’m getting on that. And of course, we’ll be a little bit heavier on the dessert side because I will forever and ever love baking. Let me know if you’re
What I’m doing this weekend: I’m going to DONUT FEST in Chicago with my assistant Rose. We’re SO excited and can’t wait to eat all the doughnuts (donut or doughnut?). It’s for an upcoming project I’m working on so yes, I will eat donuts for you! Hmmm what else? I still really want to see Zootopia! We’re also getting a new fridge on Sunday that comes with a Keurig dispenser on the outside next to the water. Pretty awesome.
Food I’m loving: Indian food! I tend to gravitate towards hispanic food, but lately have been loving curry based dishes. I even got Tony to eat vegetarian TWICE this week. SUCCESS. Another thing I can’t get enough of is chickpea flour. Like whoa, this stuff is amazing! I just started experimenting with it and am legit obsessed with the naturally sweet flavor and wonderful texture. Bonus: NO bean taste. Have you guys tried it?
Music I’m listening to: The new(er) Rihanna album is unbelievably good. It’s my morning and afternoon jam session. The music ranges from reggae to hip-hop and the beats are refreshing.

If I told my boyfriend I wanted to go vegan he’d be like, “YEAH RIGHT”. He knows I could never give up my Greek yogurt! Donut Fest sounds amazing, have so much fun!!!

I’ve been loving Indian food for pretty much YEARS NOW! Almost since the first time I’ve tried it! Curry is LIFE. I also love these favorites too! Waffles aren’t complete without chocolate 😉

i was surprised that i liked zootopia- normally i’m a staunchly anti-animated animal movie person (aside from finding nemo), but i found it to be cute and worth braving the crowd of little kids for.

I LOVE making pizza with pineapple and mixing a little BBQ sauce into the pizza sauce too…YUM! 🙂 And PB on waffles w/maple syrup is perfection! 🙂
