Hello from the beautiful Rancho La Puerto in Tecate, Mexico! I’ve been here since Wednesday checking out the extraordinary ranch, spa, group fitness, hiking and cooking classes and pretty much never want to leave. The warm sunshine and unplugging from the internet has been much needed.
How about you? What’s new in your life?
Here’s what happened this past week in my world:
I baked two batches of cookies for Tony to take to work. The cookies pictured above are these ones made with Ghirardelli cherry tango dark chocolate & Divine Chocolate hazelnut truffle chocolate. Love.
I made a lot of waffles for breakfast this past week. I’ve got a new recipe coming to you on Monday, so be sure to stop by. By the way, real deal question: How do you top your waffles? I’m all about peanut butter and a small drizzle of maple syrup or honey. I love when that PB gets trapped in the waffle pockets. It’s basically like ecstasy.
-After doing various amounts of airport travel, I realized that the Minneapolis airport has some of the best food options, especially if you’re trying to eat healthy. On my layover, I stopped by to get fresh berries, Siggi’s yogurt and some organic popcorn. They have giant sections full of really unique snacks like spicy giant pickles, olive, Mediterranean salad jars, jerky packets, gluten free crackers, actually healthy granola bars, probiotic drinks and so much more. I wish Midway or O’Hare were more like that; everything just felt so fresh in Minny.
-Tony and I saw the movie Deadpool with my other husband Ryan Renyolds. It was HILARIOUS and I highly recommend checking it out if you can. A little raunchy, but still so good.
-We’ve been really into the show Billions on Showtime. The cast is incredible and I’m addicted to the crazy story line. Check it out if you can!
-Game of Thrones will be back in approximately one month. I’ve already marked my calendar and am counting down the days until I can see Jon Snow again.
-I have a serious obsession with dark chocolate (evidence here). For the past two months, we’ve been eating it for dessert almost every night. Recently I tried the Aloha Superfood Chocolate and am IN LOVE. I’m shocked that I forgot to mention it in my most recent chocolate post. Now you know it’s a winner.
-My meal plan game has been on point lately and I’m proud of it. We never spend more than $100 at the grocery store each week and I love the variety of foods I’ve been able to test out on Tony. Question for you: Should I do meal plans on a weekly basis on AK? Would you be interested?Â
-We went to Home Depot last Sunday and bought a bunch of plants. It never really occurred to me that I would have to be cautious about buying plants due to Milly. I did some serious research and finally settled on some sort of cat palm plant for my office and sun room. Hopefully I don’t kill it.
I’m obsessed with West Elm. I go to their website on a daily basis and think about all the things I want to decorate with. I have to restrain myself from adding rugs to my cart pretty frequently. It’s sick and I think I might need help. #WestElmAddict
Enough rambling! Before we begin, I want to mention that I’m really trying to grow my Instagram and Facebook pages right now. So I would LOVE YOU FOREVER if you hopped over and gave my them both a like. Thank you!
Now on to the favorites:
These honey garlic carrots are beyond beautiful.
Favorite snack, especially while traveling. Protein power.
This vegan ice cream is pure gold.
An awesome guide to lentils + which kinds to use in recipes.
Face scrub I’m loving lately! I swear that my skin glows because of it.
Making this carrot cake for Easter (but adding a lemon cream cheese frosting for a unique twist)!
Three ways to clean your cast iron skillet. Good reads right there.
Finally got around to making this chicken schwarma. OMG it was too dang good — especially over a bowl of brown rice.
Okay, that’s all I’ve got for you. I hope you have the best Easter and treat yourself to something delicious. xo!

Thanks for all this great info…it’s appreciated! And YES to the meal plans please.
I love looking forward to your post and all the information. Where do you get the Aloha chocolate as I crave a piece of chocolate after my evening meal. I just purchased Ghiradelli Intense Dark Chocolate with sea salt and almonds to satisfy my craving. And YES PLEASE on the meal plans!!! I just “liked” your FB page. I don’t do Instagram?
I always love your posts and recommendations. (Btw, Ulta has the face scrub at buy 1 get one 40% off! http://www.ulta.com/ulta/browse/productDetail.jsp?productId=xlsImpprod12931199)

guide to lentils = YES and THANK YOU!
Yes please to the meal plans!
Thanks for all the great links! I’m also obsessed with West Elm. We bought a beautiful, yet extremely beat up coffee table as a floor sample there that we took home and refurnished ourselves. It made it affordable for us, and West Elm couldn’t do anything with it anymore anyway, so it was a win-win.
Thank you for the carrot love 🙂 Watching your ranch adventures on snapchat, and man, looks so fun and beautiful!
I have to agree that MSP has some of the best healthy airport food. Never mind getting there early for flights! Thanks for tipping me off to the Aloha chocolate, next on my to try list.
xo
Yes please to meal plans! I’d love to see how you stay under $100 and get variety in too.
Would love weekly meal plans!
YES TO THE MEAL PLAN!!! That would be really great 🙂
Hi Monique 🙂
I would really love and appreciate if you shared some meal planning! That’s impressive that you and Tony spend $100 a week on groceries. I have been struggling trying to keep our grocery bill on a budget. I think I get so excited about meal planning and cooking, not to mention I think grocery shopping is SO FUN (I’m serious haha!) and cathartic in a way, so I get carried away with my food spending. Produce is my weakness. I find making a list and having an organized meal plan for the week is helpful. I have gotten much better about not wasting food, but there is definitely room for improvement and efficiency in my grocery shopping. Hope you are having a blast in Mexico! 😀
I LOVE chicken schwarma! SO good! Enjoy Mexico girl!
