How was May for you? Did you take the time to celebrate the little things? To relish in all of your wonderful accomplishments?
Sometimes we forget to do those things, don’t we? One of my suggestions to do today is to write down five things you accomplished last month that you’re proud of.
Mine?
- Finished a very important project that I’m really proud of.
- Said no to sweets a few times (I always eat dessert after dinner.)
- Challenged myself to some of the most difficult workouts I’ve ever done thanks to Crosstown Fitness!
- Squeezed in quality time with my family amidst a busy schedule
- Gave myself permission to take a break from workout out and WORKING.
That being said, what are your accomplishments? Feel free to share them in the comments below if you’d like.
New Ambitious Kitchen recipes from May:
Here are some of the recipes that went up on the blog this month…
Baked Sweet Potato Donuts with Chocolate + Coconut DF
Nutrition Rich Omega 3 Blueberry Breakfast Cookies GF, V
Thai Peanut Chicken Stir Fry with Quinoa & Edamame GF
Small Batch Paleo Almond Flour Brownies DF, GF, P
Wild Blueberry Lavender Ice Cream V, GF
Small Batch Green Salsa Verde Chicken Enchiladas
I can’t choose the recipe I love the most because they were all amazing. Usually I have a few favorites, but this month it’s too close to call. Make them all!
But of course, AK visitors had their go-tos. Overall the most popular recipes from last month were the DIY chicken burrito bowls, coconut flour banana bread and the greek chickpea chopped salad! Good choices people.
Wellness Wednesday Posts!
This month I posted two WW posts! Obviously they continue to be a favorite here on AK.
My first post is all about the definition of being healthy and what it means. Isn’t it true that being healthy means something different to everyone?
My second post was about 4 Healthy Breakfast Toasts + how to choose healthy bread. Trust me, there’s some serious good inspiration in this post.
Travel Updates!
Last month I was in both Minneapolis and New Mexico. Of course I thought May was busy but JUNE… oh JUNE IS BUSY. One of the busiest months I’ve had in quite some time, and I’m thankful for it. Even though it requires a lot of working ahead, I know the result of my experiences will be worth it.
Next week I’m heading to Europe to sail on the James Beard Foundation Culinary Cruise of Spain and France with Windstar Cruises! OMG, right? Sarah and I can’t wait for a girl’s trip!
Before that I’m headed to Minneapolis then to Boston to do some shooting with Sarah before we depart to Europe!
Upon returning from Europe, I head back to Boston again for a girl’s blogging weekend. It’s going to be extraordinary. I’ve never been to Europe and cannot wait.
The Chicago Series!
We started the Chicago Series in May with some of my absolute favorite donuts from around the city. I hope you’ll get a chance to check it out!
The Summer Sweat Series
Last but definitely not least, I want to talk to you about the Summer Sweat Series or SSS as we like to call it. The SSS is a FREE 30 day fitness and nutrition program that includes meal plans, workouts and grocery lists. It’s a commitment to join our FB group and work towards becoming a little bit healthier inside and out.
Joining is EASY. Just come back here on June 5th and we’ll share the fitness, meal plans and grocery list with you. If you want to get the grocery list and meal plan early, join our FB group here!
What I’m craving in June
June means all things Spring. I’ve got lots of healthy goodies for you including vegetarian meals, COOKIES and some delicious no bake treats.
As always, thank you for being here. It means the world to me.
xo.
