This is going to be on rotation in our home. Perfect for a busy weeknight and keeps everyone in the family happy. We topped ours with cottage cheese and pickled red cabbage and it was amazing!!

This was delicious! We added sour cream as a topper instead of cottage cheese.

Easy to make and love the sweet potato combination. It was overly sweet and doesn’t need the brown sugar w the sweetness of the ketchup and BBQ sauce.

    • replied:

Feel free to omit the brown sugar next time!

This was a great change to my normal dinner routine! I even tried the cottage cheese on top and it was fabulous! I added some hot honey which added a little bit of sweetness and heat. This one is going on my list of ones to make often. Thank you for your creations!!!

My local meat folks at the Farmers Market were out of ground beef so I bought and used their pasture raised ground pork. It was amazing. I did take the time to pickle a red onion that morning so I would have that ready. Sweet potatoes were perfectly done and crispy on one side. Loved it. Thank you!
