Incredibly cozy, healthy vegan Mexican hot chocolate that’s perfectly sweet with a hint of spice — made with a blend of almond and coconut milk. This recipe is in partnership with McCormick Spices.

Forget the whiskey, hot chocolate has always been the best kind of night cap.

Like many of you, I’ve adored a cozy cup of hot chocolate ever since I was a little. And I should share that I’m more of a whipped cream girl rather than a marshmallow lover. How about you?

Delicious black bean enchiladas made with savory butternut squash and an incredible, homemade enchilada sauce. These are drizzled to perfection with an addicting, vegan jalapeño cashew crema!

Hello hello! I’m backkkk from beautiful Kauai. I’m feeling rejuvenated, refreshed and most of all back to feeling a little more like myself.

It’s true: 2017 was a challenging year for me. We got engaged AND planned a wedding in less than 9 months. I also helped to launch my other business Healthy Glow Co, hired Abra, expanded AK with more recipes, got into more video and was overall very overworked. It was a year of growth, personal challenges and change. Just because things get bigger, doesn’t necessarily means it’s glorious and wonderful 100% of the time.

But the more you go through the more you grow, and I’m happy to still be here, chugging along and sharing my wellness journey + recipes with you. Most of all, I’m committed to getting back to staying true to me and what AK represents: a place to inspire you in and out of the kitchen.

Healthy gingerbread loaf made with whole wheat flour and packed with heavenly spices. This will make your house smell amazing and is perfect for brunch.

This weekend was LOVELY and I hope yours was similar.

On Friday, we stayed in and watched the movie Moneyball. I hadn’t seen it before but fell in love with the storyline.

Saturday was a busy day for us as many of you already know that we’re leaving this coming weekend for our honeymoon! I’ll be gone for 3 WEEKS in Australia & Hawaii so Tony and I spent A LOT of time doing research, booking hotels, and trying to figure out how we were going to make the most of our time there. Finally later Saturday evening we ventured out into the tundra for ice skating at the Park at Wrigley. If you haven’t been and live in Chicago, I highly recommend it (they have hot cocoa and food there too).

Incredibly flavorful yellow curry chicken and rice made in one pot with plenty of veggies and delicious flavors from coconut milk, ginger, garlic and turmeric. Great for meal prep!

Hello, hello! I hope you’re reading this with a smile on your face, a cup of coffee or tea in your cup and of course that you had a relaxing, rejuvenating weekend. Did you do anything fun?

We spent Friday night dining out at my favorite sushi place in the world and sipping wine. I was craving the roll called the black mafia — if you’re ever craving sushi in Chicago, this place is where it’s at!

Saturday went by quick too — we met our wedding photographers and scoped out beautiful spots around the city to take wedding photos (we’re less than two weeks away). And on Sunday, I relaxed on the couch, made a puerto rican chicken stew with tostones and caught up on several episodes of Stranger Things.

(The stew was fantastic by the way, I’ll post the recipe soon.)
