My St. Patrick’s Day wasn’t just about celebrating the Irish… it involved skinny margaritas, fried pickles, and a 2am baking experiment. How else would a girl like me celebrate?
I feel lucky! Look you’re here reading my nonsensical obsession with margaritas and pie. I was lucky to eat fried pickles with ketchup. I’m such a ketchup lover by the way. Sometimes I feel like I forget to share things with you! Little things, big things… my obsession with ketchup kind of things. Usually I’m creating recipes, writing a quick post, and dashing off for another adventure.

Are you ready for a salad full of nutrient rich fruit? Juicy mangos, gorgeous kiwis, sweet strawberries, toasted almonds and a sprinkle of goat cheese.
Summer fruits are my favorite.

My favorite place to vacation is Mexico. Probably because there’s the beach, margaritas, and really delicious food. Enchiladas remind me of Mexico. Note to self: I still need to make homemade Sopapillas!
This salad is now one of my favorites too. It’s just too pretty.
Toasted almonds really jazz up anything. Goat cheese just puts it over the top, but you could totally go vegan with this salad. Either way it’s seriously good.
I encourage you to make it your own. A summer (preview) sensation!

This strawberry, mango & kiwi spinach salad is packed with juicy mangos, gorgeous kiwis, sweet strawberries, toasted almonds and a sprinkle of goat cheese. Perfect for summer lunches, parties, and picnics.
Ingredients
- 6 cups spinach
- 1 cup sliced strawberries
- 1 small mango, sliced
- 4 kiwis, sliced
- 1/2 avocado, diced
- 1/4 cup toasted almonds
- 3 tablespoons crumbled goat cheese
Instructions

Add spinach to large bowl. Add fruit and gently toss. Sprinkle goat cheese, avocado, and almonds on top.

Serves 2
Recipe Notes
To make vegan and/or paleo, leave off goat cheese.
Serve with chicken or chickpeas for extra protein.

I am tickled to see you are using Kiwi spinach. I did not realise that you could buy spinach from New Zealand in other countries. I thought you all grew your own. I always have baby spinach leaves in my salads. Joce
