I can always tell when it’s officially fall when I start craving warm bowls of soup. It’s not even funny how many bowls I could consume; just fill it to the brim and let me drench my bread in all that broth.
Soup & bread leaves me deliriously happy. Can you get high off grilled cheese? Just wondering.
Oh and not like it’s a secret or anything, but if I’m alone I’ll sip it slowly from the bowl. Let’s not pretend I’m the only one, internet friends.
But let me ask you a serious question: what is soup without a sandwich? Without crusty toasted buttered bread and melty cheese in the middle? Well, it just isn’t the same. Trust me, I know this bread and soup thing. Or at least I can claim to since I’ve got this food blog thing going on.
Really, what I’m wondering is if you’re ready to make a FREAKING AMAZING soup and sandwich combo?

Butta that bread!
Add some whole milk mozz. Or pepper jack if you prefer. They melt perfectly.
Top the bread with turkey bacon and sliced of ripe avocado.
Maybe some tomatoes and fresh basil, too? Your call!
Wait ‘til everything gets all melty and lovely. The salty turkey bacon is the perfect contrast to the creamy, warm avocado, but mozzarella is my favorite part of the entire sandwich. You can also get creative and add other ingredients like tomatoes and basil or perhaps some pepperoni, which elevate the flavor profile of the sandwich even more.
Quick tip: Make sure you use a nice hearty artisan bread. I purchased mine from the Whole Foods bakery and cut it thick to ensure a nice, lovely crunch.

Turkey Bacon, Avocado, & Mozzarella Grilled Cheese + Artisan Tomato Soup

Delicious turkey bacon, avocado & mozzarella grilled cheese paired with creamy artisan tomato soup. The perfect healthy lunch pair!
Ingredients
- 2 slices artisan whole grain bread (or gluten free bread of choice)
- 3 ounces mozzarella
- ½ avocado, sliced
- 1-2 slices turkey bacon
- sliced roma tomatoes, if desired
- 2 basil leaves
- butter, for spreading
Instructions

Spread butter on one side of each slice of bread.

Slice the mozzarella and lay on unbuttered sides of the bread. Add avocado and turkey bacon (plus tomato and basil, if desired) top with remaining slices of buttered bread.

Heat a skillet over medium high heat and add in sandwich. Cover with a lid and cook about 5 minutes, or until golden brown on bottom.

Carefully flip sandwich, reduce heat to medium and cook a few more minutes or until the cheese has melted and bread is golden brown. Enjoy immediately!
