The entire chicken takes just over an hour to prep and cook, so while it’s doing it’s thing in the oven you can whip up a couple of these easy, healthy recipes that are perfect for using leftover chicken. I included a mix of hearty salads, cozy soups & stews, and even my favorite enchiladas that are a breeze when you add leftover chicken.
