We’re kicking off the week with one of my favorite ways to meal prep featuring my easy whole roasted chicken recipe.

  • Step 1: make a flavorful, juicy roasted chicken with perfectly crispy skin. Or skip it and purchase a rotisserie chicken!
  • Step 2: add chicken to any & all recipes for a delicious boost of protein.
  • Step 3: pack recipes for lunch and enjoy them for dinner all week long.

The entire chicken takes just over an hour to prep and cook, so while it’s doing it’s thing in the oven you can whip up a couple of these easy, healthy recipes that are perfect for using leftover chicken. I included a mix of hearty salads, cozy soups & stews, and even my favorite enchiladas that are a breeze when you add leftover chicken.
