So say hello to these amazing paleo cookie dough truffles. We find that having little treats on hand help curb those tricky sugar cravings without restrictions. These taste JUST like your favorite cookie dough, but are made with better-for-you ingredients that you can feel good about.
Seriously, they are melt-in-your-mouth good. Roll these babies together, and keep them in the freezer to enjoy the sweet treat you deserve, xo!

Ingredients
- ½ tablespoon flaxseed meal
- 1 tablespoon unsweetened almond milk
- 2 tablespoons melted coconut oil
- 3 tablespoons coconut sugar
- 1 teaspoon vanilla extract
- ½ cup packed almond flour
- 2 tablespoons coconut flour
- ⅛ teaspoon salt
- 1½ tablespoon dark chocolate chips, dairy free if desired
- For chocolate coating:
- ⅓ cup dark chocolate chips, dairy free if desired
- 1 teaspoon coconut oil
Instructions
- In a medium bowl mix together flaxseed meal, almond milk, melted coconut oil, vanilla and coconut sugar. In a small bowl mix together almond flour, coconut flour and salt.
- Slowly add the flour mixture to the wet ingredients. Mix well until a cookie dough consistency forms.
- Fold chocolate chips into the cookie dough.
- Roll cookie dough into 1 tablespoon sized balls, place on parchment lined baking sheet and freeze for 10 minutes.
- After 10 minutes, melt the chocolate chips and coconut oil in a small saucepan over very low heat, stirring frequently. You can also microwave the chocolate in a small microwave safe bowl in 20 second increments until melted.
- Quickly use a fork to dip each cookie dough ball into chocolate, making sure to coat evenly. Transfer back to parchment lined baking sheet and sprinkle with a little coarse sea salt if desired.
- Immediately place baking sheet back in freezer for 20 minutes. Makes 8 cookie dough bites. Keep in freezer until ready to eat.

These are beyond amazing! I used sweetened almond milk since that’s all I had at home and accidentally added way too many chocolate chips but it all worked out to wonderful deliciousness!!!

Would they still turn out using only almond flour and plain old granulated sugar? 🙂 They look delicious!
Hi Samantha! You can definitely use granulated sugar, and could also try it with oat flour. The coconut flour in here actually helps thicken the dough so that it all stays together!

Just made these using 1/2 almond flour and 1/2 vanilla protein powder, and ground up coconut flakes instead of coconut flour. Turned out delish!

You have no idea how OBSESSED I am with cookie dough and chocolate. OMG, they are to die for! I can imagine that these are the same! If I made these, I would eat all the truffles!
Any thoughts on maple syrup instead of coconut sugar?
I haven’t tried it, but would recommend removing just a bit of the liquid as you’d be subbing in a liquid sweetener!
I’ve made these twice now, subbing chia seeds for the flaxseed meal (because that’s what I had on hand) and adding 1/2 teaspoon of maca powder to the dry ingredients. Omg. They. Are. So. Dang. Good. I can see myself making these for yearsssss to come, so thank you!

Delicious! I froze the balls overnight then, in the morning, I coated them in the chocolate and the coating solidfied almost instantly. These are awesome! Saved to my top recipes!

I have a cookie dough obsession! Unfortunately my body hates it when I eat the real kind all the time. Tried making this last night, and I have no idea what I did! They had a very odd earthy leafy bad taste that lingered long after you swallow. I’m thinking maybe the flaxseed but no clue. Will have to try again!
Very strange! I’m not sure where that flavor could be coming from with only 1/2 tablespoon of flaxseed meal. I would double check your ingredients here!

When the recipe is spread out of multiple pages filled with ads, it is too had to print. Many cooking sites have a print icon so that the recipe can be printed in a useful manner, usually on only one page. this looks delicious but it was impossible to print.

Just delicious! My favorite person has many food sensitivities and these totally didn’t trigger any! I didn’t have coconut flour and used all almond flour and it worked great. Thank you for all of your delicious recipes!!

Just made this and wanted to leave a comment bc I’m very pleased with the recipe. I looked at a ton of different recipes before settling on this one. What I appreciated about this recipe was that it’s healthyish without trying to be. The modifications I made.. I was out of almond milk, so I used some Lakanto maple syrup instead. I also used monk fruit sweetener in lieu of coconut sugar. I’m so excited to have these truffles stashed in my freezer for my inevitable sugar pangs. Thanks!
