
Do you have a holiday morning tradition? This year I’m celebrating with Tony and his family; we’ll each be bringing a brunch dish on Christmas morning. I haven’t decided what I’ll be making yet: french toast, pancakes, mini cinnamon rolls or banana bread. I’m definitely leaning towards the homemade mini cinnamon rolls; what do you guys think?
Of course, Christmas morning is very different from my usual breakfast. During the typical weekday, I love eggs and toast with avocado, or my cottage cheese pancakes. When I start the morning with high-protein foods, I’m always full until lunch. The other day I looked at the sodium content in my cottage cheese and was a little shocked at how much it contained: 400mg! WHAT.
After that I decided to do a little experimenting with the recipe to keep down the sodium, but still keep me full and satisfied. After some recipe testing, I found that you can sub Greek or Skyr yogurt for the cottage cheese and the pancakes will still be FABULOUS. And oh my goodness, SO filling.

I used siggi’s yogurt in my recipe which is pretty much my go-to yogurt these days. Did you know it’s actually an Iclandic-style strained yogurt? Which in my opinion is similar to thick Greek yogurts, except without all of the extra sugar. I love it because it isn’t as sweet as the other fruit yogurts out there AND it’s blended, meaning all you get is rich, silky-smooth nonfat yogurt. That’s also probably the number one reason these pancakes will keep you full forever.

I’ve been loving using different flavors of siggi’s yogurt in this pancake recipe, such as vanilla bean, acai-mixed berry and blueberry. There’s also some banana in these pancakes, so what you end up getting is something that tastes very similar to banana bread. YUM.
Know what else I love to do? Sub chocolate chips for blueberries. YEP that magic is called oatmeal chocolate chip banana bread pancakes. Get with it.

In all seriousness, these are super healthy and always stocked in my freezer for crazy mornings or sometimes a treat (if I make them with chocolate chips). I personally think Christmas morning calls for using chocolate chips, but again it’s up to you! You can check out more siggi’s dairy recipes here!

Oatmeal Blueberry Yogurt Pancakes (gluten free, high protein!)

Ingredients
- 1/2 cup gluten free rolled oats
- 1/2 teaspoon baking powder
- 1 container (5.3 oz) siggi's blueberry or vanilla bean yogurt
- 1/2 medium ripe banana
- 1 egg
- 1/2 teaspoon vanilla
- 1/3 cup fresh or frozen blueberries, plus more for serving
Instructions
- Place all ingredients except fresh blueberries into a blender; blend until smooth. You may need to add a teaspoon or two of almond milk if batter is way too thick. .
- Set batter aside to thicken up for a few minutes. If batter is too thin, add a tablespoon or two more of oats and blend again
- Lightly coat a large nonstick skillet or griddle with butter or cooking spray and heat over medium low heat. Drop batter by 1/4 cup onto skillet. Add a few blueberries on top. Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside. Wipe skillet clean and repeat with more cooking spray and remaining batter. Makes 4 pancakes.

I found this recipe to be a complete fail. I pit ingredients in blender in order listed and oats were stuck in the bottom. Had to add half a cup of water to make a batter. Half the oats were still in the bottom when i poured the batter into the pan. Pancakes came out raw, mushy and flavourless
Hi Susan – What type of blender did you use? Sounds like it wasn’t high powered enough.
These oatmeal, banana, blueberry, yoghurt pancakes were yummy. I used frozen mixed berries, plain Greek yoghurt, a full banana and a drizzle of honey in the batter so it was mushier than it should have been but not too tricky to flip over. I will definitely try them again with chocolate chips maybe. Thank you for this recipe.

This was my first time making pancakes with oatmeal and yogurt and it was delicious!! I love the simplicity of the ingredients and how filling they are. I used plain greek yogurt because that’s what I had and they came out great. Perhaps they weren’t as sweet, but I was absolutely fine with it. I could always modify that with some maple syrup. Excellent recipe!!

I do not recommend adding fruit!! I couldn’t even finish a few bites. Maybe plain or with choc chips they would taste fine, but i did not enjoy them one bit. Batter smelled good, though.

Just made these for the first time. After reading several reviews I was afraid they may not cook through. They did and they are delicious! I doubled the recipe except for the egg. I only used one. I only had one container of siggi’s yogurt (vanilla & cinnamon) so used that and added the same amount of plain 2% Greek yogurt. Once the batter was blended I added 1/2 cup of frozen organic wild blueberries, gently mixed in and let everything sit for five minutes. These pancakes cooked beautifully and tasted yummy! 😋 I was able to make 10 good sized pancakes. My 2 year old granddaughter who LOVES blueberries ate 3 pancakes and said “Mmmm”! I agree!!

These sounded so delicious but were one big gooey mess. I followed instructions completely. Never really cooked like a pancake, stuck horribly. Any idea what I’m doing wrong? Ideally want them to work!
Did you use siggi’s yogurt? I just made these recently and had no issues whatsoever! Was the batter thick or thin?
We all wake up at different times so I don’t want to run the blender in the morning. Would it be better to blend them the night before and store them in the fridge until morning? Or cook them the night before and then reheat them in the morning?
How many carbs in the pancakes? Also can I substitute a different yogurt? Unfortunately I can’t get the exact yogurt listed in the recipe.
About 29g per serving. Feel free to use an equal amount of your favorite greek yogurt!

These pancakes are delicious! I had to switch the baking powder for baking soda since I can’t have corn, but they still turned out great. With lots of new food allergies, finding yummy recipes is hard but oatmeal based stuff rocks!

Hey! I made these with my roommate on Saturday for dinner and ending up making them again on Sunday and looking forward to them for dinner again tonight. SO OBSESSED. Not to mention healthy and felt so good after them. We added banana, cinnamon, chia seeds, and peanut button on top.

Woah. I’m super excited to try these ASAP! I’ve been looking for quick and easy breakfast ideas that I can take to-go since I am ALWAYS running late in the mornings… and I don’t like oatmeal or yogurt on their own 🙁 🙁 🙁 but love them in recipes, so this is perfect!! Would you mind sharing your tips on freezing? Do you have to thaw them overnight? Warm up in the microwave? I’m thinking I could make a big batch to freeze and then warm them up once I get to the office to save time!

This is now my go-to recipe for pancakes. I added a dash of ground cinnamon because both blueberries and oatmeal have an affinity for it. I used a large well seasoned cast iron skillet with coconut oil and the pancakes came out perfectly delicious!

These are amazing! I made 6 smaller pancakes and cooked them covered in a non-stick skillet and they turned out great. If you’re having trouble with them cooking through I would put a lid on the frying pan to create more even heat. These are the best morning treat that aren’t actually a calorie splurge. I’m going to try making up some to freeze for mid-week breakfast

I tried cooking mine on low and they still didn’t cook in the middle
Very strange! If the batter seemed a bit thin, I would try blending with about a tablespoon or two more of the oats.
I am having the same problem! I cook it on low for a long time and the middle still isn’t cooked
I would try blending them with about 1-2 more tablespoons of oats, and pushing the blueberries in once you pour the batter on the pan!
The other thing I’ve noticed about these, my favourite pancakes EVER (thank you again Monique 😊) is the smaller the berries, the closer the batter is to the pan when you turn them. Larger berries make the batter stand up higher when you flip them so you need to push the mixture down with your spatula and maybe even squash the berries slightly to get the batter to make contact with the fry pan. Otherwise they will not cook as well in the middle. Don’t let that put you off making these. They are easy and SENSATIONAL!
