Hi monique, I wondered if you can use a lower fat coconut milk for this recipe as I’d like to make this for our family but my young son and husband have to watch their saturated fats intake. Any ideas?

    • replied:

Hi! The full-fat coconut milk is what helps these hold up, so I can’t recommend swapping it for a lower fat version in these. Sorry!

Nice, refreshing dessert for summer, and very creative ingredients! The base was delicious but I wasn’t so keen on the cherry topping as I didn’t think it was very flavourful, but maybe that’s just me! Next time, I will probably not serve them straight from the freezer, but will leave them to defrost slightly so they aren’t so icy.

    • replied:

Hi, Lorna! Glad that you tried these. Good idea to let them defrost a bit next time! 🙂

You should totally repost these! Perfect summer dessert. These were so easy and gorgeous looking. Made them for dinner with friends. I love that it is light and refreshing. Glad I searched for a no-bake dessert and found these!:)

Great idea! Love these for summer 🙂

    absolutely love these cheesecake bars

  • says:

I know this may be a silly question… but once the bars have spent 4-6 hrs in the freezer… do you eat straight away or keep in fridge to eat over the next day or so?

    thank you

    • replied:

Not a silly question! You eat them straight from the freezer, but you’ll need to thaw them a bit before you can cut/bite into them.

  • says:

    Hey.
Thank you for these nice recipes.
Could I make it also as a cake in 9 inch springfrom pan?

    • replied:

      Yes I think so!

  • says:

Hi Monique! I’m very excited to try these, but will have to make them almonds since I’m allergic to cashews. Will let you know how it turns out. LOVE your blog x

    • replied:

Hi Nazly! Let me know how it goes with almonds 🙂 and thanks so much!!

Can I use honey as sweetener?

  • says:

YUM! These bars look so delicious! Would have never guessed it’s vegan!

    • replied:

      Right?! So delicious and easy!

I’m so excited about these and the photo is awesome. I love cherries. I don’t have a Vitamix…do you think a standard blender or a food processor could do the job?

This is my first comment … want to say thanks for sharing beautiful healthy recipes. So many of them have become standbys for me. I’ve been making your pumpkin chocolate chip muffins once a week since you posted them. I love your Thai quinoa salad recipe (that ginger peanut dressing!) and your chicken pot pie was one of my favorite things I tried last year. I love your seasonal themed weeks … the cookie week you did last year around the holidays was great. (Also, Trader Joe’s posts…the bomb. 🙂

Hi Lisa! A food processor or pretty powerful blender should work 🙂 And thank you for the comment! I’m so glad you’ve found some delicious go-to’s here – that truly makes my day.

HI monique. Is coconut milk from the can the same as coconut milk in the tetra packs. And can they be used for the same purpose

    • replied:

Hi Juliet! I’m not sure what the coconut milk is in tetra packs, but as long as you have full-fat coconut milk it should work just fine!

  • says:

Cant wait to try these! They look amazing!

    • replied:

Thanks Emaleigh! Hope you enjoy 🙂

We are signed up to hear about the recipes, exercises and health, you seem to gush about your wedding on every post!! We don’t mind one here and there, but Please stop gloating about your wedding all the time, it puts so many of us off!!

Don’t be petty. It’s her blog and this is an exciting time in her life. For you to feel the need to leave such a negative comment says a lot about you and I can definitely assure you that you don’t speak for everybody. Go browse Pinterest for recipes if you don’t want personal touches. That’s what a BLOG is for.

I look forward to wedding news and details every time I read one of Monique’s posts. Even if you’re not interested, just scroll to the bottom – there’s no need to be rude! Getting married is a big deal. It’s something to be excited about. There is a difference between sharing excitement and “gloating”, and I have never seen the latter on this blog. Plus, personal details are what make food/health blogs fun to read.

    • replied:

wow this was very unnecessary. Is this your blog? No. Is it her blog? YES. If it bothers you that much just read the recipe and skip over the blog post. Its not that hard.

    • replied:

Julie — Sorry to hear you don’t like updates about my wedding, but guess what makes a blog unique? The stories behind it. Since 2012, I’ve shared personal stories. If that turns you off, I don’t think it’s that difficult to simply scroll down to the recipe!
