Here we are again! Another month has passed us by. Isn’t it crazy how fast 2016 seems to be going?
This month has been crazy work wise, and I’m fairly certain the next is going to be the same thing. That’s alright though, I’m looking forward to a few fun travel trips and warm weather. Anyway, this month was full of delicious things. Rose and I started on the Chicago Series and we spent time hitting up wayy too many doughnut places around the city. The guide should hit the blog on Monday and I’m SO dang excited about it. Every few weeks I’ll release a new guide! But donuts and pizza are definitely first.

The donut and pizza are just extra things I’ve experienced this month and have absolutely LOVED. The donuts will be on the blog this next week. They’re baked instead of fried! And the pizza will be in the Chicago Series.
The most popular posts this month from across the entire site was my skinny banana chocolate chip muffins, oatmeal blueberry yogurt pancakes and my thai quinoa salad. Apparently you guys will never stop loving my banana muffins and neither will I.
My personal favorite recipes from this month are probably the baked oatmeal, chicken tamale pie and quinoa mac and cheese! The mac and cheese is seriously so incredible and creamy. The chickpea banana bread has also been getting RAVE reviews! (All links are above.)

Speaking of my thai quinoa salad, I recently made a quick 1 minute recipe video for it. You can check it out below. I LOVE making recipe videos and doing video editing in general, I just wish I was a little bit better at it. Work in progress!
Travel updates!
Sarah and I talk about our everlasting desire to travel ALL THE TIME. I haven’t been anywhere since March and it’s kind of making me go a little insane. This week I am doing a mini trip to go see Lee in Minnesota aka the homeland. After that we’ll see what happens. I really want to go see my Grandma in New Mexico and possibly hit up Santa Fe for a travel guide. How fun would that be to explore?!
Oh and thank you very much for all of your Glacier recommendations! We’ve decided to postpone our trip until July. Apparently the weather is much better that time of year!

Snuggling with Milly for a little bit each morning.
Anything spiralized. These were spiralized carrot noodles from Hungryroot.
Making my own nut butters and putting them on sprouted toast (or anything in sight).
What I’m craving:
Obviously this month was heavy on the meals, now I’m craving anything with fruit or chocolate. Also, I’ve been in love with all things peanut butter again, so expect some healthier treats in May!
