A few months ago, Tony and I had the chance to visit Pensacola, Florida where we had the absolute BEST truffle fries on the planet. The heavenly hot fries were full of garlic and truffle flavor, melted in your mouth and had this beautiful crusty golden exterior that I just couldn’t get over.
I finally reached my French fry heaven. One of my weaknesses in life. Yours too? Good, because I’ve got the absolute BEST baked french fries on the planet for you to devour.
After tasting the golden brown crispy little loves in Pensacola, I fell head over heels for truffle oil. In fact, I ended up purchasing a bottle of truffle oil just so I could recreate the fries at home!
This french fry recipe calls for baking instead of frying, which makes them a lot lighter in calories in fat, but definitely not flavor.
Also, when did the regular old potato become such a bad thing? I LOVE POTATOES. And I love french fries.
What’s the secret to crispy french fries in the oven?
My secret trick is adding a little parmesan to the fries before baking. It blends with the oil and sticks to the fries, so not only does it add a crispiness like no other but you get extra flavor too.
It’s also important to cook the fries at a higher heat.
Lastly, if you can’t find truffle oil near you you can order it online here, or simply skip it and use olive oil in lieu of the truffle oil. Either way, these fries will be FANTASTIC.
I recommend serving these with bunless burgers, grilled chicken or fish, or just as an appetizer for noshing on! Hope you LOVE.

Healthy Baked French Fries with Garlic, Parmesan & Truffle Oil
- Olive oil cooking spray
- 4 medium russet potatoes, washed and patted dry
- 1 1/2 tablespoons olive oil or avocado oil
- ½ tablespoon truffle oil (or olive oil/avocado oil)
- 3 cloves garlic, finely minced
- ½ teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ cup grated parmesan cheese
- For topping:
- ¼ cup chopped cilantro or parsley
- Extra truffle oil, for drizzling on top
- Freshly ground salt and pepper, to taste
Preheat oven to 425 degrees F. Line two large baking sheets with parchment paper and generously spray with nonstick cooking spray.
Cut potatoes into ¼” inch thick matchsticks.
Place the cut potatoes into a large bowl and pat down with a paper towel to absorb any excess moisture. Next add olive oil, truffle oil, garlic, garlic powder and salt to the bowl, toss to combine. Sprinkle parmesan cheese on top and gently toss again.
Arrange fries on the two prepared baking sheets so that none of the fries are touching. This will allow them to crisp up while they bake. Spray the top of the french fries with a little olive oil cooking spray.
Place in oven, baking sheets side by side, and bake for 20 minutes, then flip fries over with a metal spatula and rotate the pans. Bake for 15-20 more minutes and flip again if necessary to brown all sides of the fries.
Once fries are nice and golden brown, remove from the oven and allow to cool on baking sheets for 5 minutes. Then drizzle a little extra truffle oil on top and garnish with extra parmesan, cilantro or parsley.
Season with additional salt and pepper, if you’d like! Serves with lots of ketchup or your favorite dipping sauce. Serves 4 people.
If you don't have truffle oil, you can simply use olive oil instead.

I am also obsessed with fries (and potato!) and always bake mine instead of frying (because what do you even do with all that oil if you fry them anyway?!). I’ve found that soaking the chopped fries in water for half an hour or so before baking gets them even crispier! (and pat them down to dry before adding the oil etc. Looking forward to trying this version of them 🙂
SO much love for this recipe! Perfect healthy decadence 🙂
I need these in my life!!
I eat oven fried French fries at least 3 times a week and I’m a dietitian! Potatoes aren’t the enemy at all. Yum!!
Love the truffle oil addition! These sound awesome!
These look wonderful! Where in Pensacola did you dine? I live in the FL panhandle! BTW: Your sea salt browned butter chocolate chip cookies are a huge hit at my daughter’s school! Many thanks!

Ate and can confirm, they’re delicious.
Wow! These pictures are stunning. I love the use of truffle oil in this recipe. I am sure these would be a winner at my house. . . we love baked fries (especially sweet potato fries!).
yes, yes so good!
Really i never new that! 🙂
My mother’s guiltiest pleasure is truffle fries! She would probably die with this recipe!!
My sister and I love anything involving potatoes. We make baked fries, slices, microwaved potatoes, you get the picture at least 3 or 4 times a week! I haven’t tried them with truffle oil but this sounds like a great way to mix it up!
Served on fries is the only way I like truffle oil. Serving it on BAKED fries with Parmesan just won over my heart all over again!
I’m thinking these fries are the only thing I need for dinner tonight! I’ve gotta get to the store and buy some potatoes before this crazy storm rolls in to Chicago – I hope you’re staying warm and safe inside today!!
Fries are my weakness. I love them in all forms…and these sound so good! One of my favorite burger places near my home makes Parmesan Truffle Fries that are absolutely amazing. Now I can try them at home. YAY
I’m going to stand in the kitchen and eat this entire pan. And then eat a salad, because balance? Oh yeah. xo
You get me.
This sounds like the best recipe for french fries ever. Garlic and truffle… I would never have thought of that. Thanks for the great inspiration :3
Love the photos a lot btw <3
I’m on a homemade fry kick lately! Love that your recipe uses truffle oil and I cannot wait to try that Go Veggie parmesan.
Wonderful recipe. Thanks a lot for sharing this. I will certainly try it and post the feedback here.
What perfectly gorgeous golden brown fries! They look fantastic!
There’s seriously no better sandwich or burger accompaniment than truffle fries. We love that Go Veggie parm stuff over here, my husband literally puts it on all things…even weird things that have no business having parmesan on them. These fries though totally call for it!
Your fries look and sound insanely good! I can’t wait to try them! Pinned
This is so delicious. Simply great.
Perfectly gorgeous golden brown fries! My best snack while watching television on weekends. Thanks
Perfect TV snack! Glad you love them 🙂

I ordered the truffle oil – these were FANTASTIC!!!
Great recipe and nice presentation
Hi! Looking to try this recipe tonight, do you recommend black or white truffle oil for these fries? Thanks in advance, Can’t wait to try these out!
You can use either! Black truffle oil will just be a stronger flavor.
