Hello hello and happy Sunday!
Super excited to share this simple healthy breakfast recipe round up with you because breakfast just so happens to typically be my favorite meal of the day. I go to bed excited about what I’m going to be having for breakfast the next morning. Everything from overnight oats to pancakes to my favorite veggie packed frittata.
If you find yourself always running late with little time to eat before you head out for the day, then I suggest trying out meal prepping for breakfast. It’s a great way to make sure you aren’t just having the usual latte to start your day (I’ve been there!). You want a breakfast that’s going to fill you up and make you feel good too.
Each of the recipes below pack plenty of protein & fiber so that you’ll be left feeling satisfied. The only question you need to answer, is which will you make first?!
1. Jalapeño, Pepper Jack & Turkey Bacon Quiche with Potato Crust
2. Pumpkin Pie Overnight Oats with Chia
3. Loaded Veggie Avocado Quinoa Frittatas
4. Scrambled Tofu Breakfast Tacos

We like having breakfast for supper too but don’t do it too often. When you make breakfast for supper what do you serve the next morning? I have trouble with variety ideas.
Love it! I’ll usually do a savory breakfast for dinner and then a sweet breakfast the next morning to mix it up 🙂
