We’re ridiculously excited for spring over here and thought it would be a great idea to put together a list of what to make in April; get ready to jump in the kitchen and celebrate ALL the beautiful seasonal produce April has to offer.
April showers bring May flowers, plus the best veggies to make salads, easy dinners, and even my favorite baked treats. As you can probably tell, I’m low-key obsessed with adding citrus to baked goods, so be sure to stock up on oranges & lemons all month long.
Below I’ve included a variety of vegetarian options for Meatless Monday dinners, plus easy ways to sneak veggies into any meal (if you haven’t tried this homemade pizza recipe yet, it’s a must make).
