May’s Recipe of the Month
You’re going to LOVE May’s Recipe of the Month: Italian Chopped Brussels Sprouts Salad! This chopped salad is crunchy, savory, filling and the most popular salad on AK.
We have many different ways that you can customize this salad to truly make it your own. Check them out below and, of course, read through the recipe blog post itself for all of the tips you’ll need.
- Swap your protein. Customize your protein by using grilled chicken instead of salami or chickpeas. You could even swap in some crispy bacon or ham for the salami.
- Make it vegetarian. Simply omit the salami to keep this salad vegetarian.
- Go vegan. Looking to make it vegan? Omit the salami & cheeses and enjoy as-is.
- Pasta party. Get a little wild and add some cooked elbow, bowties or cavatappi noodles!
Here’s how the Recipe of the Month works
- The recipe: on the first Wednesday of each month we’ll share a reader-favorite Ambitious Kitchen recipe to make that month. You have the entire month to make the recipe!
- The giveaway: When you make the recipe (anytime during the month!) you have two different ways to enter to win a $100 Crate & Barrel gift card. We’ll randomly select a winner at the end of the month. See below for the two ways to share! Must be 18 years or older, USA only.

In an effort to combat malnutrition brought on by decades of celiac disease, I always add as many veggies as possible to our meals.
Rice noodles, prawns rather than chicken. Added carrots, red bell, purple cabbage, yellow squash, baby bok choy. I don’t know how I managed to get all the veggies and noodles aldente at the same time. Love all the flavor. Thank you Monique.

Super yummy! I cannot take credit for actually making it since my husband made it for us. I did read the reviews on how spicy it was so he only put 3/4 of the space and we were adding more after we started eating. So I feel like the original recipe would have the right spice level. Unfortunately our grocery store is out of basil, per usual, so we just left that out. Definitely add honey roasted Cashews! So good!

Made the Sweet and Spicy hot chilli noodles for the 2nd time this month!! First time I made it with tofu and I LOVED it! Made it extra spicy and with gluten free chickpea noodles! My husband was gone so the meal was all for me. He got home tried it and loved it. So this weekend I made it again with ground chicken and a little l as spice (for my husband) and used cauliflower noodles. Again we loved it! This meal will be in our regular rotation!

This meal was so good, I made it tonight and it was a hit! I made some changes since my food store was out of so may things. I used pad thai noddles and turkey in place of the chicken. My food store was also out of hot chili paste so I used trader Joe’s Italian bomba hot pepper sauce (only 2 tablespoons) that was used in another AK recipe! I loved it and so did my boyfriend. I cannot wait to try it will all the intended ingredients but these substitutes were great. #AKDinnerParty,

Made this last night!!!! So goooood! My hubby is not a big spicy food fan but this had just enough heat to make it delicious without putting him on fire! No fresh basil locally so threw on some parsley for some green prettiness! Can’t wait to see what next month’s AK Dinner Party brings!

5/5 stars for sure! This recipe is fantastic, fast, and so easy to modify for your family. I have celiac so I used my favorite gluten free spaghetti and added cubed eggplant as well as sliced bell pepper and onion to get some veggies in and it turned out superb. Even before the dinner party this dish was a favorite in my house so I loved a reason to make it again and change it up! #AKDinnerParty

Made these noods last night in honor of the #AKDinnerParty and absolutely loved them! I like spice, but don’t have a high spice tolerance, so this recipe got me out of my comfort zone and was the best kind of exercise in mindful eating. I had to take my time eating it b/c it was SPICAY, but savored every bite and couldn’t help but get seconds. My husband loved it as well and said he hadn’t ever had anything like it. but that it was the best and most original thing we’d eaten in a while. Made the recipe exactly as described (used Lotus Foods pad thai rice noodles and Bragg’s aminos to keep it GF) and it came out SO. WELL. We loved this recipe! I’ve made it twice in one week already. I always bake my meatballs in the oven, so I took another reviewer’s advice for these meatballs and baked them in the oven (375 for 15 minutes) and the meatballs turned out great. Subbed in coconut sugar for brown sugar and coconut aminos for soy sauce. Served it over quinoa with chopped peanuts on top. I will be making a big batch of these meatballs to freeze to use on future weekday dinners. Thank you for another amazing recipe!

Another great dinner. Thank you. We made it GF with aminos and rice krispies (instead of bread crumbs) and added carrots. We served with coconut rice and felt more sauce would have overwhelmed the rice and we would have lost that added flavor. This dish was substantial but not heavy, It was very filling. I also love how this community is rallying around each other over these parties.

This was delicious! I used cauliflower rice instead of rice and cooked it in the instant pot instead. First I sautés all sides and then high pressure for 6 minutes! I will be making again.

My fiancé and I loved this recipe! I made it exactly as written, except I substituted tapioca starch. The only suggestion I’d make is to use a fattier ground chicken; I felt like mine was too lean, but that’s my own fault. I’d definitely make this again! #AKDinnerParty

This was soooooo good! My almost 2 year old LOVED the meatballs and mixing the sauce. I swapped ground beef for the chicken and green beans for the broccoli as that’s what I had. It was still great! That sauce was seriously SO good! We will be making this often. Just so flavorful and easy to throw together. #AKDinnerParty

Hi There- I’m planning on making this dish for Meatless Monday today, but don’t really understand how to use the tofu instead of the chicken. Do I just mix the tofu squares with all of the ingredients that go into the meatballs? Thanks

Love this, very tasty, will definitely make again. Made it gluten free, added bok choy and served over coconut rice. Only critique, pan frying meatballs took 30+ mins, likely user error? Next time will likely flash fry to get crispy meatballs then bake to cook through. Thank you! #AKDinnerParty

My friend had said she prepared this on Sunday for her parents and so I was inspired to make it. I used ground turkey and peppers instead of broccoli. My husband and I both had seconds and the next day the sauce was even better- it had thickened up way more than having it fresh! I shared with my mom and she made it for last night’s dinner!

This recipe was really quick and delicious. I saw a recommendation to cook the meatballs on the oven, so I did that with parchment paper for easy clean up. Made the April AK dinner party recipe and it was amazing! Mods- peas, yellow and green squash, green beans. Served with Barilla chickpea and red pepper rotini (because the mix of red and yellow was pretty) Yum! Thank you for concocting this.
Love love love this recipe. I think I made the sauce to thick and may have had a wonky noodle to sauce ratio since we combined the noodles we had from two left over boxes, HA. Making it work.
Also we added shrimp to the recipe. It was delicious.

I love how most of AK’s recipes make for easy clean up and staples from the pantry and fridge. This was an easy recipe to prepare and make. I didn’t soak the cashews ahead of time so it was nice to have a quick alternative option for preparing these for the sauce. I do wish that my dish had more sauce/was creamier but I think that could have been because of the type of pasta I used ( I didn’t use bow tie). I was also thinking that this dish is a great meal to make if you’ve forgotten to take out a meat to defrost.

This recipe had a strange mouthfeel for me. I think I was missing some fat in the sauce. I roasted the veggies with chicken sasusage and tried adding gluten free pasta. I was anticipating a lot of flavor but mostly tasted garlic. I would have to experiment more to bring up the flavors.

I made this recipe for a small dinner party for four. It was a total hit!! I doubled the recipe and it was fun and delicious! Everyone enjoyed putting together their bowl and loved the seasoning on the salmon. I made guacamole instead of avocado slices and also had corn as a topping. We passed different hot sauces at the table. The rice was flavorful and is a definite keeper. I used plain white rice because it was what I had on hand. AK’s Damn Good Salmon Taco Bowls are one of my husband and my favorite recipes, so when I saw it was picked for the #AKDinnerParty and they’re donating to a reproductive rights charity this month, I was extra pumped. We make this recipe at least once a month already because it’s that damn good. I think it’s better than any salmon dish I’ve had at a restaurant. We made it again tonight, and it was as delicious as ever. Pro tip: double or triple the salmon seasoning recipe and store it so you don’t have to mix all the spices each time. Used this recipe for a delicious “Taco Tuesday” salmon bowl inspiration. Made the salmon as directed, but served over cauliflower rice and crunchy romaine with pickled red onions and jalapeño. 10/10! This recipe was delicious! My goat cheese went bad so I subbed parm-reggiano at the end, and it will still wonderful. I added garbanzo beans for some protein, and cooked the veggies in the oven at 400. I will definately make this again-next time with all of the proper ingredients. It tasted even better reheated the next day.
We got a bunch of zucchini and basil in our CSA box and I knew immediately I wanted to try this recipe. It was fantastic! We added grilled shrimp on top and it truly tasted like summer in a bowl. #AKDinnerParty

Loved these tacos! Made a substitution for the peppers, instead of the Jalapeño I used Fresno 🌶 (which we typically don’t have very often here in AK). This added a pinkish hew to the cashew sauce (also 💣.com- will be using this on a variety of things!)

I loved this recipe and didn’t change anything. The jalapeño cashew lime cream has the perfect balance of creamy, acid, heat and citrus. My favorite part of the recipe was the grilled corn. The chili powder and cumin held on with olive oil added just enough spice to the sweetness of the corn. I will definitely make this again. Thanks, Monique

Made this recipe as written for my meal prep this week–will make it again. The chicken seasoning is a game changer! Easy to make recipe–broiled the corn and panned the chicken thighs using my cast iron as I prepared the sauce and salsa.
SO YUMMY!!! I’m kind of obsessed with zucchini boats for dinner, and this is such a delicious take on them! Love the unique pesto and cant go wrong with cheesiness. And so easy!! Must make!

WOW! I am a huge pesto lover (so I may be biased) but these were so incredibly good. I’m always looking for ways to use rotisserie chicken because it’s so affordable and delicious! I will definitely be making this again!

This is Delicious!! I used Ground Chicken & Basil instead of Cilantro. I made the homemade Pesto which was easy & so good! I grilled the zucchini ,filled & put back on grill until heated & cheese melted (as per recipe) It came out so good! I had a couple left over & had the next night & it tasted even better!
The lightest yet filling summer dish for a toasty evening! I just swapped the cilantro with basil because I had so much in my garden and needed to use it up! Literally summer on a plate. #AKdinnerparty

Love, love this recipe!! I have been making this for my family for months! Since they like crispy green beans I add them later in the cooking process but we love it both ways. One pot dinners on busy nights are the best and make extra because leftovers heat up great.

This was delicious and easy to make! I used extra bell pepper instead of green beans and regular onion instead of green – Simply to use up what I had on hand. Perfectly filling and loaded with flavor! Definitely 5 stars 🤩

Our whole family loves this recipe, we have four kids (16,13,9 & 6) and this meal is awesome for a one pan dinner that everyone enjoys, simple, delicious, great nutrition – perfect for busy fall nights after school and soccer. Thanks for another fabulous dinner!

Not my first time making these enchiladas and it won’t be my last. Such a great recipe, we love Mexican food and love the twist on a classic. Left out the chicken and added some shredded zucchini instead.

Holy moly this is GOOD! I wasn’t able to wait until Thanksgiving to give it a try. It was a hit amongst my husband, our friends, and the toddlers. I used all purpose GF flour and you’d never be able to tell the difference. Definitely going to be making this again!

I made these cookies for a friendsmas with my high school friends and significant others. I wanted to make them gluten free for a friend who has celiac, so I used almond flour. I’ve never used almond flour before, so I think I may have gone wrong somewhere… they turned out flat/bubbly but still chewy. The flavor was delicious (yes I still brought them to the party lol), so I’ll glad they didn’t go to waste. Has anyone had this happen to them before? I want to make them again for sure. If they’re that good with a mess up, you know they’re amazing!
This was probably one of the best cookies I’ve ever made. The texture turned out superb as it was soft yet a little chewy on the inside. It was full of flavors and the touch of cream in between made these cream pies irresistible! My husband loved them so much he ate most of them. This is definitely a keeper recipe that I’ll probably make at least one other time this holiday season,

The gingerbread oatmeal cream pie cookies in the #AKCookieParty are AMAZING! I had lots of help in the kitchen and ended up making some unplanned adjustments and they’re still delicious. The dough chilled overnight (oops!) and we baked the next day. So much easier with nice, cool dough! I also ran out of powdered sugar and didn’t make it to the store for 3 days so these little gems sat in a sealed container patiently waiting.
I have kids who typically don’t like anything with ginger, but loved the addition to the classic oatmeal cream pie here. Soft cookies and delicious filling. I need to make another batch to share with family over Christmas!
I veganized this recipe using Earth Balance plant butter, flax egg, and oat milk. I made the cookies a wee bit smaller, so I was able to get 16 sandwiches (32 cookies) out of the batter. The cookies turned out beautifully — both vegan and nòn-vegan friends raved about them. I personally prefer less sweet desserts, so I probably will try to ŕeduce the sugars in both cookies and frosting a smidge next time. Excellent recipe, easy to follow directions, with a tasty and adorable result — a real winner!
I made this last night and it was so good. Super easy to make on a weeknight. Will be in rotation during these cold months.

My husband and I LOVED this soup recipe! It was easy to prepare, even prepping the fresh butternut squash when following the AK instructions provided on the website. Also, we live at high altitude, and I would need to add about 10 minutes more cooking time for the lentils to soften, but the squash was cooked perfectly.

These were the most amazing fudgey brownies ever! I made them with my 4 and 6 year old niece/nephew and they devoured them! I used coconut sugar and followed the recipe exactly as written and they were the perfect. Loved that the ingredients were simple and healthy. 5 stars!

These brownies are 10/10! I am recently dairy free so was excited to find this recipe! I used regular flour instead of coconut flour and they turned out just fine! Loved the tip to not over bake…gooey and delicious!

The AK Recipe of the Month for March looks delicious and easy to make! I appreciate the different ways to customize the meatballs to fit my preferences. The chance to win a gift card and the mention of a charity of the month are nice touches. However, I wish the post had included more information about the charity and its mission.
This is truly one of my favorite dinner recipes so I was so glad to see it as the recipe of the month, not that I needed an excuse to make it again though. I bake the meatballs in the over while making the sauce as I find that just works better for me and it comes out just as yummy. #AKRecipeoftheMonth

I meal prepped this recipe for my mother and myself this week and it is so delicious and filling! I followed the recipe (minus the onions) and love that it is low carb since I have type 1 diabetes and she was recently diagnosed with type 2. We have both been struggling with eating on the medications and really enjoyed this salad!
