Welcome to the AK DINNER PARTY, a fun month-long series where we inspire you to cook a recipe with us! Whenever we ask the AK Community what they want to see more of, dinner recipes are typically the most popular answer. What better way to get back in the kitchen and cook a nourishing, delicious dinner than to do it alongside the AK team and hundreds of other foodies?!

May’s Dinner Party recipe

We’re SO excited to share the next recipe of our AK Dinner Party series: Damn Good Salmon Taco Bowls! It’s such a great dinner for meal prepping, feeding just 2 people, or even doubling to serve more.

We have many different ways that you can customize this recipe to truly make it your own. Check them out below and, of course, read through the recipe blog post itself for all of the tips you’ll need.

  • Choose a new protein: feel free to use 2 6oz chicken breasts or 1 lb shrimp instead of salmon filets. You’ll add the taco seasoning the same way, then you can bake or grill the chicken, and bake, grill or cook the shrimp in a skillet!
  • Swap your grains: instead of jasmine rice, you could also use brown rice or quinoa. Please note that you’ll need to cook brown rice longer according to the directions on the package, but quinoa should work with the same cooking time.
  • Serve more people: you can easily double or triple the recipe to serve more people if you’d like!

Want to make it vegetarian?

This recipe would also work well with tofu! To swap the salmon for tofu:

  1. Cut your tofu block into 2×3″ rectangular strips to bake or grill your tofu, or cube your tofu to bake or pan fry it.
  2. After cubing or cutting your tofu into 2×3″ rectangular strips, toss it in the taco seasoning until each cube or strip is well coated.
  3. Then grill it with these tips, bake it at 400 degrees F for 25-30 minutes flipping halfway through, or pan fry the tofu until it’s golden brown on all sides.

  1. The recipe: On the first Wednesday of each month we’ll share a reader favorite Ambitious Kitchen dinner recipe to make that month. You have the entire month to make the recipe!
  2. The giveaway: When you make the dinner recipe (anytime during the month!) you have two different ways to enter to win a $100 Target gift card. We’ll randomly select a winner at the end of the month. See below for the two ways to share!

Two ways to enter the giveaway

When you make the recipe, there are two different ways to share your creation with us in order to enter to win the $100 Target gift card:

1. On the blog: leave a comment and rate the recipe here with the hashtag #AKDinnerParty, plus your name and email (so we know you made it!) Scroll all the way past the recipe itself in the blog to where it says “Leave a comment & a rating.” Boom!


2. On social media: Share a photo of your recipe creation on social via Instagram (stories or in-feed) or in our Facebook Group by tagging @ambitiouskitchen and adding the hashtag #AKDinnerParty. *Please note for Instagram your profile must be public so that we can see your posts.

  • Wednesday, May 4th: May’s recipe is here! On this date, you can start cooking & sharing your recipe photos on social and on the blog.
  • Monday, May 30th: the last day to submit your recipe photos on social and on the blog.
  • Tuesday, May 31st: giveaway winner selected, notified via email, and shared on social.
  • Wednesday, June 1st: June’s Dinner Party recipe announced!

Let’s give back

Each month we’ll pick a new charity where we’ll donate funds as a way to spread the love and do some good. This month’s charity is the National Abortion Federation Hotline Fund, which has the largest national hotline for abortion referrals and financial assistance in the U.S. and Canada. Donations directly help connect patients with consultation, referrals, and travel-related expenses so that they can receive safe abortion care.
