Green things! Finally, right?
For the last month, I ate way too much Mexican food, drank too many bottles of wine, and consumed wayyyy too much sugar. Talk about an overload. What I really need in my life (and maybe yours, too) is a little balance.
The good news is that work finally seems to be slowing down and I’m planning a couple of things including a blog redesign and a trip to Australia!
Yes, my boyfriend and I are headed down under for almost two weeks next month! Our trip starts in Sydney, then we’re road tripping from Brisbane to Byron Bay, then back through the Gold Coast, and finally ending in Brisbane for one of my darling friend’s wedding. She just sent me a picture of the bridesmaid’s dress and it’s beyond gorgeous!
Even though I briefly lived in Australia and explored, I’m excited to head back and do some adventuring! Above is a picture of me at Byron Bay, the most eastern point of Australia; it was where I first learned to surf!

Anyway these parmesan green beans… let’s just get straight to it!
They’re roasted and basically taste like french fries. I don’t know why, but roast any veggie and you get a french fry taste. Alright guys, I admit it’s not exactly like a french fry but they’re so delicious they could be just as addicting. I think you know where I’m headed here. Me trying to get you to try these green beans.
I came up with this recipe after my daily grocery store trip to Whole Foods during the holiday season. They featured creamy whipped sweet potatoes, turkey, cranberries, and these incredible roasted garlic green beans in the Hot bar.
I fell in loveeeeee.
These green beans make such a wonderful, healthy side dish. The garlic and Parmesan gives them a unique flavor, plus the tomatoes are a great twist and add a little bit of sweetness to the beans. If you’re not into tomatoes, simply omit them.
Sometimes I like to add chopped basil or red pepper flakes if I’m feeling spicy.
But I always feel spicy.

Sesame Garlic Grilled Sweet Potato Fries with Yogurt Curry Dip

Ingredients
- 1 1/2 pounds green beans, washed and trimmed
- 1 cup grape tomatoes, sliced in half
- 1 tablespoons olive oil (just enough to coat the beans)
- 4 cloves of garlic, finely minced
- 3/4 teaspoon kosher salt
- freshly ground black pepper
- 1/4 cup Parmesan cheese
Instructions

Preheat oven to 425 degrees F.

Place green beans and tomatoes in a large bowl and add olive oil, garlic, salt and pepper, and Parmesan cheese; toss to coat beans.

Spread out green beans on baking sheet and bake for 12-17 minutes or until cheese melts and green beans are slightly golden brown. Serves 4-6.

I used to pan-fry them with minced onions and garlic. Will try roasting them next time!

I actually would microwave the beans for about five minutes so they’re a little softer and not so dag on crunchy other than that great idea ?Love love
OK so I did the recipe but these beans are not cooking well enough to be edible having said that I think that the beans need to be boiled in water first then they will be edible The concept is good but the cooking time is wrong….we need to cook it at least 20 more minutes
Made this with Vidalia onions (they are in season and grown about 50 miles from here). Otherwise, followed the recipe. Hade them with grilled steak and corn on the cob for Sunday dinner.
My 74 year old husband who usually gives me grief over new recipes LOVED them. Ate 3 servings.

Made this tonight. The kids liked it so that was a plus. The green beans were a little crispy for my taste even though I blanched before, could have stood for more time. I will make again the flavors were great.
