Good news: if you’re still obsessing over AK Pumpkin Week like we are (anyone else have a freezer full of marbled chocolate pumpkin muffins?) you’re going to LOVE today’s round up of healthy winter squash recipes.
Winter squash is probably one of my favorite ingredients to cook with in the fall and winter. It adds a delicious sweet and savory element to any recipe, and packs plenty of fiber for keeping you full and satisfied. With each type of winter squash the recipe options are endless, which is why they’re perfect for pretty much any meal of the day.
Start with this acorn squash recipe for breakfast, meal prep this gorgeous butternut squash salad for lunch, and don’t forget about these incredible enchiladas for dinner. If you’re new to preparing fresh squash, check out this post + how-to video to see the best way to cut and dice it up! The instructions are for preparing a pumpkin, and can be easily used for any type of squash you have.
Time to get your squash on! Hit up the store this weekend and pick a favorite: acorn, butternut, spaghetti maybe?? You can’t go wrong.
