Happy Sunday! I hope you guys had a delicious week filled with all of your favorite sweet treats. We’ve been sneaking bites of my leftover paleo chocolate cake all week long (update: it’s still incredible) so I wanted to round up some of my favorite healthy dinner recipes that are perfect for meal-prepping.
When I meal-prep for dinner I usually opt for one pot or one pan meals that pack plenty of veggies and protein. There’s nothing better than ending a long day with a dinner that you’re actually excited to eat, so these meal-prep dinners have tons of flavor.
I included some go-to stir-frys, sheet pan meals, and slow cooker soups and stews to keep your weeknight dinners fun and delicious. You’ll also find some easy chicken marinades + my favorite salmon for two that’s perfect for adding any veggies you have on-hand.
