I have been looking for a healthier substitute for our Sunday night nachos or quesadillas and think I have found it with your two chili stuffed sweet potato recipes.
I also regularly make your layered salads and love your mama’s Puerto Rican chicken and rice!
I also got in to the overnight oats during the summer.

Vegan chili is one of my favorite types of recipes. A comforting stew with beans, vegetables, and spices in a tomato base can’t ever be beaten!

I have made this about 50 times over the past few years. It is my family’s favorite dish! I don’t make it quite as healthy as yours: I add an extra cup of broth, a cup of wine, no corn, 1 can each of pinto, kidney and garbanzo beans., 1 minced jalapeno, 1 minced anaheim pepper and 1 minced serrano. I use a splash of kosher salt when sauteeing the onions/peppers. And I add more ground turkey (1.5 -2 lbs ). I am excited to make your turkey lasagna tomorrow!!!
