We’re BACK with another epic Round Up Sunday! This week I went through pretty much every recipe on my site (no joke) to round up alllll of the vegetarian meals that I have. You read that right: 52. Recipes. All vegetarian. YUM! There’s a fabulous mix of veggie-packed salads, hearty soups & stews, delicious comfort foods, and even vegetarian-takes on traditionally meat-heavy meals. Long story short: there’s something for everyone in this round up. I think the best part was going back in time to some recipes from 2011 and 2012 – Abra and I call them “vintage AK.” I discovered some gems back in the good ol’ days of young AK, and I now have a new list of recipes to re-make for this fall. Yum. I have so many tabs opened to save in a second. The polenta bake has always called my name. It sounds somewhat similar to the Kashi Mayan Harvest bake they used to have and renamed to something new. I used to eat that like 2x a week and now I have celiac disease…they don’t certify that Gluten Free. SOOOOO I’ll make your recipe. Thank you!!!
